Quick and easy one pot chicken dinner

Ingredients
  • 4 or 5 chicken thighs or legs
  • 1 16 Oz. bottle of Italian dressing (I prefer a fat free for this)
  • 1 medium onion
  • 3 or 4 cloves garlic
  • Italian seasoning to taste
  • A couple ounces of wine
  • 2TBSP Olive oil
  • 6-8 small potatoes or 2-3 large ones

Instructions
  1. Marinate the chicken in the dressing overnight. In the fridge, of course.
  2. Pour the oil in the cooker and and use medium heat to brown the chicken. I go about 5 minutes a side. This really helps lock in flavor. Save the marinade, you’ll need thin later.
  3. While that’s happening slice the onion into ¼ to ½ inch sliced and cut in half.
  4. Peel and press the garlic with a knife.
  5. Set aside for now.
  6. Peel/wash potatoes as desired. Cut the potatoes in pieces about the size of half of your fist and place in the steaming basket.
  7. When done browning the chicken, set aside. Cook the onions and garlic until translucent. About 5 minutes.
  8. De-glaze the pan with the wine. Pour in the marinade. return the chicken to pan. Sprinkle the Italian Seasoning on the top.
  9. Place the steaming basket with potatoes on top of that. Put the cover on the pressure cooker and crank the heat up high. When it reaches pressure (about 5 minutes) turn the heat down to a little less than half and set your timer for 8 minutes. When done remove from heat and let pressure release naturally (not quick release).
  10. Potatoes can be eaten as is, or will mash quite well with your favorite method.
  11. Chicken will be moist and very yummy.

Notes
I do this in a 6½ quart stainless steel stove top pressure cooker. You will also need a steaming insert. The times here are: About 15 minutes for browning and cutting up the veggies. About 5 or 6 to get up to pressure. About 8 cooking About 10 for natural pressure release. All that adds up to around 40 minutes or so.

Ingredients
Dough
  • ½ cup oleo, softened
  • ½ cup shortening
  • 1½ cup sugar
  • 2 eggs
  • 2¼ cup all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp soda
  • ¼ tsp sa1t
Coating
  • 2 tbsp sugar
  • 2 tsp cinnamon

Instructions
  1. Preheat oven to 400°
  2. Thoroughly mix oleo, shortening, sugar & eggs
  3. Blend in Flour, Cream of Tartar, Baking Soda & Salt
  4. Shape dough by rounded teaspoonfuls into balls.
  5. In a separate dish, mix Cinnamon & Sugar
  6. Roll balls in Coating mixture.
  7. Place 2″ apart on un-greased baking sheet.
  8. Bake 8-10 minutes, or until set
    Remove from baking sheet immediately,

Ingredients
Dough
  • 1 pkg Yeast
  • 1½ cup Water
  • ¾ tsp Sugar
  • ¾ tsp Salt
  • 1 tbsp Salad (Olive) Oil
  • 4½ cups Flour
Sauce
  • 1 12 oz can Tomato Paste
  • 2 tbsp Oil
  • ¼ tsp Salt
  • ¼ tsp Garlic Salt
  • 1 pinch Black Pepper
  • 1 tsp Italian Seasoning
  • 2 tsp Oregano
  • 1 tbsp Minced Dried Onion
  • ½ can (6 oz) water
Toppings
  • 1 LB Cheese
    Mozzarella
    Provolone
    Lucatelle
    Or some combination of the above
  • 1 LB Pepperoni
  • 1 LB Italian Sausage

Instructions
Dough
  1. Dissolve yeast in 1½ cups Warm Water
  2. Add sugar, salt and oil.
  3. Add flour while mixing (approximately 4½ cups)
    Knead divide in two and let rise. (an hour or two as I recall)
Sauce
  1. Combine all ingredients
    Mix well
Assemble
  1. Preheat oven to 400
  2. Roll out to fit large pizza pans
  3. Spread sauce
  4. Sprinkle with cheese
  5. Arrange meat(s)
  6. Bake for 10 – 14 minutes

  • 1 or 2 LB Hot dogs
  • ¼ cup Chopped Onion
  • 2 tsp Sugar
  • ¾ tsp Dry Mustard
  • ¼ tsp Salt
  • ⅛ tsp Pepper1 tsp Paprika
  • 3 tbsp Vinegar
  • 6 tbsp Ketchup
  • 2 tsp Worcestershire Sauce
  • ½ cup Water

Instructions
  1. Preheat oven to 350
  2. Arrange Hot dogs in a single layer in shallow pan
  3. Saute the onion in a little oil. When golden, add remaining ingredients.
  4. Simmer for 15 minutes.
  5. Pour over the hot dogs in pan.
  6. Bake for 15 minutes at 350, basting frequently.

Quick and easy baked white fish

Ingredients
  • 1 lb boneless cod or tilapia fillets
  • 1 packet Italian Dressing mix
  • ⅓ cup bread crumbs
  • ½ stick butter
  • 1 lemon
  • Paprika

Instructions
  1. Preheat oven to 350.
  2. Melt butter and juice ½ the lemon into it.
  3. Mix bread crumbs and Italian Dressing mix.
  4. Dip fish in butter
  5. Coat with bread crumb mixture and place in shallow foil lined pan.
  6. Drizzle remaining butter over fillets.
  7. Sprinkle with paprika to taste.
  8. Bake for 25 – 30 minutes or until flakes easily.
  9. Serve with rice or pasta

Simple crock pot pulled pork recipe

Ingredients
  • 2 16 oz. bottles sliced pepperoncini
  • 2 cloves garlic (minced)
  • 1 3-4 lb pork roast
  • 2 12 oz. bottles of your favorite sauce

Instructions
  1. Put meat and pepperoncini in the crock pot. Liquid and all.
  2. Cook on low for 6 – 8 hours
  3. Remove meat and pull apart with a couple forks
  4. Using a slotted spoon, remove pepperoncini and mix with meat and sauce.
  5. Serve warm on a kaiser roll.
